The best way to get into the spirit of Fall is with all things pumpkin and cannabis. We decided to create our own version of Pumpkin Bars, using Insane Churro cookies as an ingredient for that spicy and buttery flavor and cannabis infused effect.

Cookie Crust

The cookie crust for this recipe has a little more body to it than usual since half of it goes on the bottom and half of it goes on top. We start out with a flour and oats combination, add crumbled cookies and melted butter, and we are off to the pumpkin patch races.

1 1/4 cup of Fine Pastry Flour

Oats for Insane Churro Pumpkin Bars

1 1/4 cup oats

Crumbled Insane Churro cookies infused foods cannabis edibles

1 1/4 cups Insane Churro crumbled cookies

Sugar for Insane Churro mini cookies infused foods cannabis edibles

1 cup of granulated sugar and one cup brown sugar

melted butter for Pumpkin Bars

3/4 cup of melted butter

Combine flour, oats, cookie crumbs, a tsp of salt, a tsp of baking soda and whisk together in a mixing bowl. Next add the sugar and the melted butter and mix together evenly.

Take half of the cookie crust combination and press it into the bottom of a baking dish. Place in oven preheated to 350 for 8-10 minutes until the crust starts to turn golden brown.

Pumpkin Filling

The filling is simple and delicious. You take a can of pumpkin puree, mix it together with some sugar, spices, vanilla, an egg, an egg yolk and some milk and there you have it. We forgot to add the milk to the mixture, but added it to the baking dish after and it worked out just fine.

1 can of pumpkin puree

3/4 cup of granulated sugar

3/4 cup of brown sugar

Tablespoon of Cinnamon

Tablespoon of Nutmeg

Tablespoon of Vanilla

One egg and one egg yolk and 3/4 cup of milk

Combine Crust and Filling and Bake

Once you have put together the filling, the crust will be ready to take out of the oven, and you can pour the filling right onto the crust getting a nice even layer covering the entire surface, and then you add the rest of the cookie crust on top and return to the oven for 16-20 minutes until the corners are golden and the middle only jiggles a little.

Place in oven preheated to 350 for 16-18 minutes
