Summer is a time to celebrate. In honor of National Chocolate Chip Cookie Day and Big Pete's being available in Florida through Liberty Health Sciences dispensaries, we whipped up a delicious Florida inspired chocolate chip cookie based dessert. The Orange Meringue Pie is a beautiful summer treat with fresh sun grown oranges bursting with flavor. Combine all of that sweet and tart orange flavor with the chocolate chips and crumbled Sativa Chocolate Chip Cookies and you have a great reason to party.
Ingredients and Instructions
Crust
2 10-packs of Sativa Chocolate Chip Cookies
1/3 cup of butter
1 cup of chocolate chips
Crumble the cookies using a fork into a Pie Plate until they are a fine and consistent crumb.
Add 1/3 cup of melted butter
Evenly distribute chocolate chips on top of cookie crumbs
Cook for 12-15 minutes at 375 degrees Fahrenheit
Remove and allow to cool
Filling
1 cup freshly squeezed orange juice
1/2 cup water
1 cup sugar
3 tablespoons orange zest
1/4 cup corn starch
3 egg yolks, whipped
Slowly cook orange juice, water, sugar and corn starch in a pan over medium heat until it thickens and bubbles. Remove one cup of filling and add to whipped egg yolks combining slowly so yolks do not clump up. Pour this mixture back into the rest of the filling. Bring back to boiling, add zest and reduce to low heat and cook while stirring for two minutes. Add the filling to the crust.
Meringue
3 egg whites
1/8 teaspoon of cream of tartar
6 tablespoons of sugar
Whip egg whites until frothy. Add cream of tartar and whip until the egg combination starts to form peaks as you lift the fork or mixer out of the mixture. Add one tablespoon of sugar at a time while whipping and continue beating. Once the mixture has stiff peaks when you lift the fork out of the mixture you can add it to the pie and bake at 350 for 12-15 minutes or until golden brown.
